For the Crust:

  • For the custard oats:
  • 1 cup rolled oats
  • 2 cups milk (dairy or plant-based)
  • 1 egg yolk
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • For the mixed berry compote:
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp water
  • 1 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp cornstarch (optional, for thickening)

Instructions

1. Prepare the Crust:

  1. 1. In a saucepan, combine oats, milk, and salt. Cook over medium heat, stirring occasionally, until the oats are soft and the mixture thickens (about 5-7 minutes).
  2. 2. In a small bowl, whisk the egg yolk with honey and vanilla. Temper the yolk by slowly adding a few spoonfuls of the hot oat mixture while whisking constantly.
  3. 3. Pour the tempered yolk mixture back into the saucepan and stir well. Cook for another 2-3 minutes until creamy. Remove from heat.
  4. 4. For the compote: In another saucepan, combine berries, water, honey, and lemon juice. Simmer over medium heat for 5 minutes until berries break down.
  5. 5. If using cornstarch, mix it with 1 tsp water and stir into the compote. Cook for 1 more minute until slightly thickened.
  6. 6. Serve the custard oats in bowls, topped with warm berry compote.

Notes

For vegan version: Use plant-based milk and replace egg yolk with 1 tbsp chia seeds soaked in 3 tbsp water. The compote can be made ahead and stored in the fridge for up to 5 days.
