For the Crust:
- For the custard oats:
- 1 cup rolled oats
- 2 cups milk (dairy or plant-based)
- 1 egg yolk
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- For the mixed berry compote:
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp water
- 1 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp cornstarch (optional, for thickening)
Instructions
1. Prepare the Crust:
- 1. In a saucepan, combine oats, milk, and salt. Cook over medium heat, stirring occasionally, until the oats are soft and the mixture thickens (about 5-7 minutes).
- 2. In a small bowl, whisk the egg yolk with honey and vanilla. Temper the yolk by slowly adding a few spoonfuls of the hot oat mixture while whisking constantly.
- 3. Pour the tempered yolk mixture back into the saucepan and stir well. Cook for another 2-3 minutes until creamy. Remove from heat.
- 4. For the compote: In another saucepan, combine berries, water, honey, and lemon juice. Simmer over medium heat for 5 minutes until berries break down.
- 5. If using cornstarch, mix it with 1 tsp water and stir into the compote. Cook for 1 more minute until slightly thickened.
- 6. Serve the custard oats in bowls, topped with warm berry compote.
Notes
For vegan version: Use plant-based milk and replace egg yolk with 1 tbsp chia seeds soaked in 3 tbsp water. The compote can be made ahead and stored in the fridge for up to 5 days.
