For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat granulated sugar, brown sugar, eggs, oil, and vanilla until smooth. Stir in grated carrots.
  4. Gradually mix dry ingredients into the wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until creamy.
  7. Spread frosting over cooled bars. Cut into squares and serve.
