Description

Soft and chewy cookies with a rich chocolate flavor enhanced by pumpkin puree.


Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix pumpkin puree, sugar, oil, egg, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto the prepared baking sheets.
  7. Bake for 10-12 minutes or until set.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
