Apple Muffins with Crumb Topping

Moist and tender apple muffins topped with a sweet, buttery crumb topping. Perfect for breakfast or as a snack.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups finely chopped apples
  • For crumb topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter, 1/2 tsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugars, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs, then add milk, melted butter, and vanilla. Stir into dry ingredients until just combined. Fold in chopped apples.
  4. For crumb topping: mix flour, brown sugar, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs.
  5. Fill muffin cups 2/3 full. Sprinkle crumb topping generously over each muffin.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in pan for 5 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
