Crispy baked chimichangas filled with seasoned chicken, cheese, and veggies for a healthier twist on the classic fried version.

For the Crust:

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tsp taco seasoning
  • 4 large flour tortillas
  • 2 tbsp melted butter
  • 1/2 cup salsa
  • 1/4 cup sour cream (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken, cheese, bell peppers, onions, and taco seasoning.
  3. Divide the filling evenly among the tortillas. Fold sides inward, then roll tightly to form burritos.
  4. Brush each chimichanga with melted butter and place seam-side down on the baking sheet.
  5. Bake for 20-25 minutes until golden and crispy. Serve with salsa and sour cream.

Notes

You can customize the seasonings to taste.
