For the Crust:

  • 8 large eggs
  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Arrange asparagus in a single layer in a greased baking dish. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
  3. Make small wells among the asparagus and crack an egg into each well. Sprinkle Parmesan cheese over the top.
  4. Bake for 15-20 minutes or until eggs are set to your desired doneness.
  5. Serve immediately.
