For the Crust:
- 8 large eggs
- 1 bunch fresh asparagus, trimmed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Arrange asparagus in a single layer in a greased baking dish. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
- Make small wells among the asparagus and crack an egg into each well. Sprinkle Parmesan cheese over the top.
- Bake for 15-20 minutes or until eggs are set to your desired doneness.
- Serve immediately.
