For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side.
- Transfer chicken to a baking dish. Spread pesto evenly over each breast.
- Sprinkle mozzarella and Parmesan cheeses on top.
- Bake for 20-25 minutes or until chicken reaches 165°F (74°C) internally.
