For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 cup boiling water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  3. Stir in milk, melted butter, and vanilla until just combined. Spread batter evenly in the prepared dish.
  4. Sprinkle blueberries evenly over the batter. Sprinkle 1/2 cup sugar over the blueberries.
  5. Carefully pour boiling water over the top. Do not stir.
  6. Bake for 40-45 minutes, until the cake is golden and the blueberry sauce is bubbling. Let cool slightly before serving.
