Description
A traditional Brazilian stew made with black beans, meats, and vegetables, typically served with rice.
Ingredients

- 2 pounds dried black beans
- 1 pound pork shoulder, cut into chunks
- 1/2 pound smoked sausage, sliced
- 1/2 pound bacon, chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 bay leaves
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 6 cups water or beef broth
Instructions
- Soak the black beans in water overnight; drain and rinse.
- In a large pot, heat olive oil over medium heat and sauté onion and garlic until softened.
- Add pork shoulder, smoked sausage, and bacon; cook until browned.
- Add the soaked beans, bay leaves, salt, pepper, and water or broth.
- Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender.
- Remove bay leaves before serving.
Notes
For a vegetarian version, omit the meats and add more vegetables like bell peppers and carrots.
