For the Crust:
- 4 large flour tortillas
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup cooked and crumbled bacon
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, whisk the eggs and season with salt and pepper.
- Heat butter in a skillet over medium heat and scramble the eggs until fully cooked. Remove from skillet.
- Place a tortilla in the skillet and sprinkle half with cheese, scrambled eggs, bell peppers, onions, and bacon.
- Fold the tortilla in half and cook for 2-3 minutes per side until golden and cheese is melted.
- Repeat with remaining tortillas and ingredients. Slice into wedges and serve warm.
