For the Crust:
- 2 cups broccoli florets, chopped
- 2 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
1. Prepare the Crust:
- Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
- Stir in broccoli and cook for another 5 minutes until broccoli is tender.
- Reduce heat to low. Stir in heavy cream and shredded cheese until cheese is melted and soup is creamy.
- Season with salt, pepper, and paprika. Serve hot.
