Broccoli Potato Cheese Soup

For the Crust:

  • 2 cups broccoli florets, chopped
  • 2 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

1. Prepare the Crust:

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  3. Stir in broccoli and cook for another 5 minutes until broccoli is tender.
  4. Reduce heat to low. Stir in heavy cream and shredded cheese until cheese is melted and soup is creamy.
  5. Season with salt, pepper, and paprika. Serve hot.

Notes

You can customize the seasonings to taste.
