Ingredients

  • 4 pounds Yukon Gold potatoes, peeled and quartered
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Place potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
  2. While potatoes cook, heat butter in a saucepan over medium heat. Cook, swirling occasionally, until butter foams and turns golden brown, about 5-7 minutes. Remove from heat.
  3. Drain potatoes and return to pot. Mash with a potato masher or whip with a hand mixer.
  4. Heat milk in a microwave-safe bowl until warm, about 1 minute.
  5. Add warm milk to potatoes and mix until combined. Gradually stir in browned butter until potatoes are creamy.
  6. Season with salt and pepper to taste. Serve hot.
