For the Crust:
- 1 lb carrots, peeled and sliced
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/4 cup water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine carrots, butter, brown sugar, water, salt, and pepper.
- Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes until carrots are tender.
- Uncover, increase heat to medium-high, and cook for 3-5 minutes until glaze thickens, stirring occasionally.
- Remove from heat, stir in parsley, and serve warm.
