A simple and delicious homemade version of the classic Indian butter chicken, rich in flavors and easy to prepare.

- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon garam masala
- 1 can (14 oz) diced tomatoes
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.
- Stir in ground cumin, coriander, turmeric, chili powder, and garam masala. Cook for 1 minute to toast the spices.
- Add diced tomatoes (with their juices) and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
- Add chicken pieces to the skillet. Season with salt. Cook for 8-10 minutes, stirring occasionally, until chicken is cooked through.
- Stir in heavy cream and butter. Simmer for 2-3 minutes until the sauce is smooth and creamy.
- Garnish with fresh cilantro and serve hot with rice or naan.
Notes
Adjust the spice levels to your preference. For a richer flavor, marinate the chicken in yogurt and spices beforehand. This recipe serves 4 and can be made in under 30 minutes.
