For the Crust:
- 1 lb boneless, skinless chicken breasts, diced
- 8 oz penne pasta
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
- Reduce heat to medium-low. Add cream cheese, heavy cream, and chicken broth to the skillet. Stir until cream cheese is melted and sauce is smooth.
- Combine cooked pasta with the chicken and sauce mixture. Transfer to a greased baking dish.
- Top with mozzarella and Parmesan cheeses. Bake for 15-20 minutes until cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
