Cajun Cream Cheese Chicken Pasta Bake

For the Crust:

  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz penne pasta
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C). Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced chicken, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
  3. Reduce heat to medium-low. Add cream cheese, heavy cream, and chicken broth to the skillet. Stir until cream cheese is melted and sauce is smooth.
  4. Combine cooked pasta with the chicken and sauce mixture. Transfer to a greased baking dish.
  5. Top with mozzarella and Parmesan cheeses. Bake for 15-20 minutes until cheese is bubbly and golden.
  6. Let cool for 5 minutes before serving.

You can customize the seasonings to taste.
