Cajun Jambalaya Soup

Description

A hearty soup inspired by jambalaya with Cajun spices.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb chicken breast, diced
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup shrimp, peeled and deveined
  • 2 green onions, chopped for garnish

Instructions

  1. Heat a large pot over medium heat and add the sliced sausage. Cook until browned, about 5 minutes.
  2. Add diced chicken and cook until no longer pink, about 5-7 minutes.
  3. Stir in onion, bell peppers, and garlic. Sauté for 3-4 minutes until softened.
  4. Add rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until rice is tender.
  6. Add shrimp and cook for another 3-5 minutes until shrimp is pink and cooked through.
  7. Garnish with green onions and serve hot.

Notes

Adjust Cajun seasoning for spice level. Can be made with vegetable broth for a vegetarian version.
