For the Crust:
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C).
- Press tortillas into a greased pie dish, overlapping slightly to form a crust.
- Sprinkle half of the cheddar and mozzarella cheeses over the tortillas.
- In a bowl, whisk together eggs, milk, salt, black pepper, and garlic powder.
- Pour the egg mixture over the cheese in the pie dish.
- Top with diced bell peppers, onions, and the remaining cheese.
- Bake for 25-30 minutes or until the center is set and the top is golden brown.
- Let cool for 5 minutes before slicing and serving.
