For the Crust:

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C).
  2. Press tortillas into a greased pie dish, overlapping slightly to form a crust.
  3. Sprinkle half of the cheddar and mozzarella cheeses over the tortillas.
  4. In a bowl, whisk together eggs, milk, salt, black pepper, and garlic powder.
  5. Pour the egg mixture over the cheese in the pie dish.
  6. Top with diced bell peppers, onions, and the remaining cheese.
  7. Bake for 25-30 minutes or until the center is set and the top is golden brown.
  8. Let cool for 5 minutes before slicing and serving.
