Flaky puff pastry rolls stuffed with a cheesy vegetable filling, perfect for appetizers or snacks.

For the Crust:

  • 1 sheet puff pastry, thawed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced zucchini
  • 1/4 cup diced onions
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together mozzarella cheese, bell peppers, zucchini, onions, garlic powder, oregano, salt, and pepper.
  3. Roll out the puff pastry sheet and cut into 4 equal rectangles.
  4. Divide the veggie-cheese mixture evenly among the rectangles, placing it along one long edge.
  5. Roll up the pastry tightly, sealing the edges with a bit of egg wash.
  6. Brush the tops with egg wash and bake for 20-25 minutes until golden brown.

Notes

You can customize the seasonings to taste.
