A delicious low-carb twist on classic ravioli using zucchini slices as the pasta.

For the Crust:
- 2 large zucchinis, thinly sliced lengthwise
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- Fresh basil leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Lightly grease a baking dish.
- In a bowl, mix ricotta, mozzarella, parmesan, egg, garlic powder, basil, salt, and pepper until well combined.
- Lay out zucchini slices and place a spoonful of cheese mixture on each. Fold over to create ravioli shapes.
- Arrange ravioli in the prepared baking dish. Spoon marinara sauce over the top.
- Bake for 25-30 minutes until zucchini is tender and cheese is melted.
- Garnish with fresh basil before serving.
