Chicken and Broccoli Orzo

A creamy and comforting one-pot dish featuring tender chicken, fresh broccoli, and orzo pasta.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 5-6 minutes. Remove and set aside.
  2. In the same skillet, sauté onion and garlic until softened, about 2-3 minutes.
  3. Add orzo, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 8 minutes.
  4. Stir in broccoli and cooked chicken. Cover and cook for another 5 minutes until broccoli is tender.
  5. Remove from heat and stir in heavy cream and Parmesan cheese until creamy and well combined.

Notes

You can customize the seasonings to taste.
