For the Crust:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup orzo pasta
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 5-6 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened, about 2-3 minutes.
- Add orzo, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 8 minutes.
- Stir in broccoli and cooked chicken. Cover and cook for another 5 minutes until broccoli is tender.
- Remove from heat and stir in heavy cream and Parmesan cheese until creamy and well combined.
