For the Crust:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes.
  2. Add onion and garlic, sauté until softened, about 3 minutes.
  3. Stir in pumpkin puree, diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  4. Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally.
  5. Taste and adjust seasonings as needed. Serve hot.
