For the Crust:
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes.
- Add onion and garlic, sauté until softened, about 3 minutes.
- Stir in pumpkin puree, diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper.
- Bring to a simmer, then reduce heat and cook for 20 minutes, stirring occasionally.
- Taste and adjust seasonings as needed. Serve hot.
