- 500 grams chicken
- ½ tsp salt
- 6 cups water
- 1 small onion
- 1 small carrot, chopped
- 4 to 5 garlic cloves
- 1 inch ginger
- 10 to 12 coriander stems
- 1 tsp black pepper
- Sweet corn kernels
- 1 tsp white vinegar
- 2 tbsp green chili sauce
- 1 tsp dark soy sauce
- ½ tsp salt
- Corn Flour
- 1 tbsp corn flour
- 2 tbsp water
- Other Ingredients
- 2 tbsp cooking oil
- 4 chopped green chilies
- 1 tbsp chopped garlic
- 1 tbsp chopped ginger
- 2 eggs
- 1 tbsp chopped spring onion
- ½ tsp crushed black pepper
Instructions
- Preparation:
- Prepare all ingredients as listed including chopping vegetables and mincing garlic and ginger.
- Cooking Soup Base:
- Heat 2 tbsp cooking oil in a pot.
- Add chopped garlic, chopped ginger, and green chilies; sauté well.
- Add chicken pieces and cook until no longer pink.
- Add water, onion, carrot, garlic cloves, ginger, coriander stems, and black pepper; bring to a boil.
- Simmer the soup to develop flavors.
- Seasoning and Corn Addition:
- Add sweet corn kernels, white vinegar, green chili sauce, dark soy sauce, and salt.
- Mix corn flour with 2 tbsp water to make a slurry and add to the soup to thicken it.
- Egg Addition:
- Beat the eggs lightly.
- Slowly drizzle the beaten eggs into the simmering soup while stirring gently to create egg ribbons.
- Final Touches:
- Add chopped spring onion and crushed black pepper.
- Stir gently and turn off the heat.
- Serve hot garnished with additional spring onions if desired.
