  • 500 grams chicken
  • ½ tsp salt
  • 6 cups water
  • 1 small onion
  • 1 small carrot, chopped
  • 4 to 5 garlic cloves
  • 1 inch ginger
  • 10 to 12 coriander stems
  • 1 tsp black pepper
  • Sweet corn kernels
  • 1 tsp white vinegar
  • 2 tbsp green chili sauce
  • 1 tsp dark soy sauce
  • ½ tsp salt
  • Corn Flour
  • 1 tbsp corn flour
  • 2 tbsp water
  • Other Ingredients
  • 2 tbsp cooking oil
  • 4 chopped green chilies
  • 1 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 2 eggs
  • 1 tbsp chopped spring onion
  • ½ tsp crushed black pepper

Instructions

  1. Preparation:
  2. Prepare all ingredients as listed including chopping vegetables and mincing garlic and ginger.
  3. Cooking Soup Base:
  4. Heat 2 tbsp cooking oil in a pot.
  5. Add chopped garlic, chopped ginger, and green chilies; sauté well.
  6. Add chicken pieces and cook until no longer pink.
  7. Add water, onion, carrot, garlic cloves, ginger, coriander stems, and black pepper; bring to a boil.
  8. Simmer the soup to develop flavors.
  9. Seasoning and Corn Addition:
  10. Add sweet corn kernels, white vinegar, green chili sauce, dark soy sauce, and salt.
  11. Mix corn flour with 2 tbsp water to make a slurry and add to the soup to thicken it.
  12. Egg Addition:
  13. Beat the eggs lightly.
  14. Slowly drizzle the beaten eggs into the simmering soup while stirring gently to create egg ribbons.
  15. Final Touches:
  16. Add chopped spring onion and crushed black pepper.
  17. Stir gently and turn off the heat.
  18. Serve hot garnished with additional spring onions if desired.
