Cilantro Orange Chicken with Rice and Beans

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh orange juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, combine orange juice, cilantro, garlic, cumin, smoked paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 6-7 minutes per side until golden and cooked through.
  3. Meanwhile, cook rice according to package instructions. Stir in black beans and reserved marinade, then simmer for 5 minutes. Serve chicken over rice and beans.
