For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup fresh orange juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, combine orange juice, cilantro, garlic, cumin, smoked paprika, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 6-7 minutes per side until golden and cooked through.
- Meanwhile, cook rice according to package instructions. Stir in black beans and reserved marinade, then simmer for 5 minutes. Serve chicken over rice and beans.
