  • 2 large sweet potatoes, washed and sliced into 1/2-inch rounds
  • 8 ounces cream cheese, softened
  • 1/2 cup fresh cranberries, chopped
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Brush the sweet potato rounds with olive oil and season with salt, pepper, and cinnamon.
  3. Arrange the rounds on the baking sheet and bake for 20-25 minutes, or until tender.
  4. While the potatoes bake, mix the softened cream cheese, chopped cranberries, and honey in a bowl until well combined.
