Creamy Bean Soup With Kielbasa

For the Crust:

  • 1 lb kielbasa, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add kielbasa and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Add chicken broth, beans, and smoked paprika. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in heavy cream and cooked kielbasa. Simmer for another 5 minutes. Season with salt and pepper.
  5. Garnish with fresh parsley before serving.
