For the Crust:

  • 1 package (20 oz) cheese tortellini
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add cherry tomatoes and spinach to the skillet. Cook until spinach wilts and tomatoes soften.
  4. Pour in heavy cream and stir in Parmesan cheese. Simmer until the sauce thickens slightly.
  5. Add cooked tortellini to the skillet and toss to coat evenly with the sauce.
  6. Season with Italian seasoning, salt, and pepper. Serve warm.
