For the Crust:
- 1 package (20 oz) cheese tortellini
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add cherry tomatoes and spinach to the skillet. Cook until spinach wilts and tomatoes soften.
- Pour in heavy cream and stir in Parmesan cheese. Simmer until the sauce thickens slightly.
- Add cooked tortellini to the skillet and toss to coat evenly with the sauce.
- Season with Italian seasoning, salt, and pepper. Serve warm.
