For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1 (15 oz) can white beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles
  • 1 (32 oz) box chicken broth
  • 1 (8 oz) block cream cheese, cubed
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add white beans, corn, green chiles, chicken broth, taco seasoning, cumin, and garlic powder. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken and shred with two forks, then return to the crockpot.
  5. Add cubed cream cheese and stir until melted and creamy. Season with salt and pepper to taste.
  6. Serve warm with optional toppings like shredded cheese, tortilla chips, or sour cream.
