Description

A simple and comforting soup made with caramelized onions, beef broth, and topped with melted cheese on crusty bread.


Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 cup dry white wine
  • 8 cups beef broth
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted
  • 1 1/2 cups grated Gruyere cheese

Instructions

  1. In a large pot, melt butter and olive oil over medium heat.
  2. Add sliced onions and sugar; cook, stirring occasionally, until onions are caramelized, about 30-40 minutes.
  3. Stir in white wine and cook until evaporated.
  4. Add beef broth, bay leaves, and thyme; bring to a boil, then simmer for 20 minutes. Season with salt and pepper.
  5. Preheat broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices and grated Gruyere cheese.
  6. Broil until cheese is melted and bubbly, about 2-3 minutes. Serve hot.

Notes

For a vegetarian version, substitute beef broth with vegetable broth. Let the soup cool slightly before adding the bread to prevent sogginess.
