A quick and healthy stir fry featuring ground turkey, crisp vegetables, and a homemade teriyaki sauce.

For the Crust:

  • 1 lb ground turkey
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil to make the teriyaki sauce. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add ground turkey and cook until browned, breaking it into small pieces.
  3. Add garlic and ginger to the skillet, stirring for 30 seconds until fragrant.
  4. Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Pour the teriyaki sauce over the turkey and vegetables. Stir well to coat everything evenly and cook for 2 more minutes.
  6. Garnish with green onions and sesame seeds before serving.

Notes

You can customize the seasonings to taste.
