  • 1 pint canned tomatoes (diced, crushed, or tomato sauce)
  • Mixed vegetables (frozen, dehydrated, freeze dried, etc.)
  • 2 tablespoons greens powder or a handful of kale, spinach or chard
  • 2 pints canned beans
  • Optional starches
  • Optional protein (cooked chicken, sausage, ground beef, lentils or chickpeas)
  • Seasonings (to taste)
  • 6 cups broth (chicken, beef or vegetable)

Instructions

  2. Step 1: In a heavy-bottomed pot, sauté onions in olive oil or butter. Add carrots, celery, mushrooms, or bell peppers if using.
  3. Step 2: When vegetables soften, add the garlic and seasoning for about one minute.
  4. Step 3: Add tomatoes, broth, any remaining vegetables except greens and cabbage, and starches.
  5. Step 4: Simmer until the grains are cooked, and starchy vegetables are fork-tender.
  6. Step 5: Add beans, greens powder, and any meat you are using and simmer for a few more minutes to allow flavors to combine.
  7. Step 6: Taste, and add salt and pepper as desired.
