For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (24 oz) jar marinara sauce
- 6 cups beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Brown ground beef with onion and garlic in a large pot; drain excess fat.
- Add marinara sauce, beef broth, basil, oregano, salt, and pepper. Bring to a boil.
- Stir in broken lasagna noodles and simmer for 15-20 minutes until noodles are tender.
- In a small bowl, mix ricotta and Parmesan cheese.
- Serve soup hot, topped with a dollop of ricotta mixture and sprinkled with mozzarella cheese.
