Lasagna Soup

A comforting and hearty soup that captures all the flavors of classic lasagna in a bowl.

For the Crust:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 6 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Brown ground beef with onion and garlic in a large pot; drain excess fat.
  2. Add marinara sauce, beef broth, basil, oregano, salt, and pepper. Bring to a boil.
  3. Stir in broken lasagna noodles and simmer for 15-20 minutes until noodles are tender.
  4. In a small bowl, mix ricotta and Parmesan cheese.
  5. Serve soup hot, topped with a dollop of ricotta mixture and sprinkled with mozzarella cheese.
