A simple and flavorful one-pan meal featuring tender salmon with a zesty lemon garlic butter sauce, roasted alongside vegetables.

For the Crust:
- 4 salmon fillets (6 oz each)
- 1 lb baby potatoes, halved
- 1 bunch asparagus, trimmed
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C). Line a sheet pan with parchment paper.
- Toss halved baby potatoes with 1 tbsp melted butter, salt, and pepper. Spread on the pan and roast for 15 minutes.
- In a bowl, mix remaining melted butter, minced garlic, lemon juice, zest, oregano, salt, and pepper.
- Remove pan from oven. Push potatoes to one side. Add salmon fillets and asparagus to the pan. Brush salmon and asparagus with the lemon garlic butter mixture.
- Return to oven and bake for 12-15 minutes until salmon is cooked through.
- Garnish with fresh parsley before serving.
