A simple and flavorful one-pan meal featuring tender salmon with a zesty lemon garlic butter sauce, roasted alongside vegetables.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400Β°F (200Β°C). Line a sheet pan with parchment paper.
  2. Toss halved baby potatoes with 1 tbsp melted butter, salt, and pepper. Spread on the pan and roast for 15 minutes.
  3. In a bowl, mix remaining melted butter, minced garlic, lemon juice, zest, oregano, salt, and pepper.
  4. Remove pan from oven. Push potatoes to one side. Add salmon fillets and asparagus to the pan. Brush salmon and asparagus with the lemon garlic butter mixture.
  5. Return to oven and bake for 12-15 minutes until salmon is cooked through.
  6. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
