For the Crust:
- 1 lb ground pork
- 2 stalks lemongrass, finely minced
- 2 cloves garlic, minced
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tsp black pepper
- 1 egg
- 2 cups cooked jasmine rice
- 1 cucumber, sliced
- 1 carrot, julienned
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp chili flakes
Instructions
1. Prepare the Crust:
- In a bowl, mix ground pork, lemongrass, garlic, fish sauce, brown sugar, black pepper, and egg until well combined.
- Form the mixture into 1-inch meatballs and place on a baking sheet.
- Bake at 375°F for 20-25 minutes or until fully cooked.
- Whisk together lime juice, soy sauce, and chili flakes to make the sauce.
- Assemble bowls with rice, meatballs, cucumber, carrot, and cilantro. Drizzle with sauce.
