For the Crust:

  • 1 lb ground pork
  • 2 stalks lemongrass, finely minced
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp black pepper
  • 1 egg
  • 2 cups cooked jasmine rice
  • 1 cucumber, sliced
  • 1 carrot, julienned
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tsp chili flakes

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ground pork, lemongrass, garlic, fish sauce, brown sugar, black pepper, and egg until well combined.
  2. Form the mixture into 1-inch meatballs and place on a baking sheet.
  3. Bake at 375°F for 20-25 minutes or until fully cooked.
  4. Whisk together lime juice, soy sauce, and chili flakes to make the sauce.
  5. Assemble bowls with rice, meatballs, cucumber, carrot, and cilantro. Drizzle with sauce.
