Description
This minestrone soup recipe is SO easy and delicious. It’s filled with pasta, beans, tomatoes, and veggies and seasoned with Italian herbs.

- 2 tablespoons extra-virgin olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, chopped
- 2 celery ribs, thinly sliced
- 1 teaspoon sea salt, plus more to taste
- Freshly ground black pepper
- 3 garlic cloves, grated
- 1 (28-ounce) can diced tomatoes
- 1½ cups cooked white beans or kidney beans, drained and rinsed
- 1 cup chopped green beans
- 4 cups vegetable broth
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ¾ cup small pasta, elbows, shells, or orecchiette
- ½ cup chopped fresh parsley
- Red pepper flakes
- Grated Parmesan cheese, optional, for serving

- Step 1: Heat olive oil in a large pot over medium heat.
- Step 2: Add diced onion, chopped carrots, and sliced celery. Season with sea salt and freshly ground black pepper. Cook, stirring occasionally until softened, about 5-7 minutes.
- Step 3: Stir in grated garlic and cook for another minute until fragrant.
- Step 4: Add diced tomatoes with juices, cooked beans, chopped green beans, vegetable broth, bay leaves, dried oregano, and dried thyme to the pot. Bring to a simmer.
- Step 5: Add small pasta and continue cooking until pasta is tender, about 10 minutes.
- Step 6: Remove bay leaves and stir in chopped fresh parsley. Adjust seasoning with salt, pepper, and red pepper flakes if using.
- Step 7: Serve hot with grated Parmesan cheese if desired.
