Easy Minestrone Soup

Description

This minestrone soup recipe is SO easy and delicious. It’s filled with pasta, beans, tomatoes, and veggies and seasoned with Italian herbs.

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, chopped
  • 2 celery ribs, thinly sliced
  • 1 teaspoon sea salt, plus more to taste
  • Freshly ground black pepper
  • 3 garlic cloves, grated
  • 1 (28-ounce) can diced tomatoes
  • 1½ cups cooked white beans or kidney beans, drained and rinsed
  • 1 cup chopped green beans
  • 4 cups vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ¾ cup small pasta, elbows, shells, or orecchiette
  • ½ cup chopped fresh parsley
  • Red pepper flakes
  • Grated Parmesan cheese, optional, for serving

Instructions

  2. Step 1: Heat olive oil in a large pot over medium heat.
  3. Step 2: Add diced onion, chopped carrots, and sliced celery. Season with sea salt and freshly ground black pepper. Cook, stirring occasionally until softened, about 5-7 minutes.
  4. Step 3: Stir in grated garlic and cook for another minute until fragrant.
  5. Step 4: Add diced tomatoes with juices, cooked beans, chopped green beans, vegetable broth, bay leaves, dried oregano, and dried thyme to the pot. Bring to a simmer.
  6. Step 5: Add small pasta and continue cooking until pasta is tender, about 10 minutes.
  7. Step 6: Remove bay leaves and stir in chopped fresh parsley. Adjust seasoning with salt, pepper, and red pepper flakes if using.
  8. Step 7: Serve hot with grated Parmesan cheese if desired.
