No-Bake Strawberry Cheesecake

A creamy and refreshing no-bake cheesecake with a strawberry topping, perfect for summer.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Spread the filling over the crust and smooth the top. Refrigerate for at least 4 hours or overnight.
  5. Before serving, arrange sliced strawberries on top and brush with strawberry jam for a glossy finish.
