For the Crust:

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F and grease an 8Γ—8 baking dish.
  2. In a large bowl, mix oats, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, whisk together pumpkin puree, eggs, maple syrup, milk, and vanilla.
  4. Combine wet and dry ingredients, then fold in pecans.
  5. Pour into prepared dish and bake for 30-35 minutes until set.

Notes

You can customize the seasonings to taste.
