Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F and grease an 8Γ8 baking dish.
- In a large bowl, mix oats, baking powder, pumpkin pie spice, and salt.
- In another bowl, whisk together pumpkin puree, eggs, maple syrup, milk, and vanilla.
- Combine wet and dry ingredients, then fold in pecans.
- Pour into prepared dish and bake for 30-35 minutes until set.
