For the Crust:
- 1 (14.3 oz) package Oreo cookies
- 1 (8 oz) package cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1 tsp pumpkin pie spice
- 2 cups white chocolate chips
- 1 tbsp coconut oil
Instructions
1. Prepare the Crust:
- Crush Oreo cookies into fine crumbs using a food processor or blender.
- In a large bowl, mix Oreo crumbs, softened cream cheese, pumpkin puree, and pumpkin pie spice until well combined.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 30 minutes.
- Melt white chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each frozen Oreo ball into the melted chocolate, allowing excess to drip off. Return to baking sheet and let set.
- Refrigerate for at least 1 hour before serving.
