For the Crust:

  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/4 cup pumpkin puree
  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 tablespoon chia seeds
  • Optional toppings: whipped cream, pecans, extra cinnamon

Instructions

1. Prepare the Crust:

  1. Combine oats, milk, pumpkin puree, maple syrup, pumpkin pie spice, salt, and chia seeds in a jar or container.
  2. Stir well until all ingredients are fully combined and no dry spots remain.
  3. Cover and refrigerate for at least 4 hours or overnight. Stir before serving and add desired toppings.
