For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, minced garlic, salt, pepper, and thyme until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden brown.
- Remove from the oven and sprinkle with Parmesan cheese while still hot. Serve immediately.
