For the Crust:
- 4 large eggs
- 1/4 cup milk
- 1/2 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Melt butter in a skillet over medium heat and scramble the eggs until fully cooked.
- Lay out the tortillas and evenly distribute the scrambled eggs, cooked sausage, and shredded cheese on each.
- Roll up the tortillas tightly, tucking in the sides as you go.
- Heat a clean skillet over medium heat and lightly toast the roll-ups for 1-2 minutes on each side until golden and crispy.
- Slice in half and serve warm.
