A delicious and easy breakfast option with sausage, scrambled eggs, and cheese rolled up in a tortilla.

For the Crust:

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Melt butter in a skillet over medium heat and scramble the eggs until fully cooked.
  3. Lay out the tortillas and evenly distribute the scrambled eggs, cooked sausage, and shredded cheese on each.
  4. Roll up the tortillas tightly, tucking in the sides as you go.
  5. Heat a clean skillet over medium heat and lightly toast the roll-ups for 1-2 minutes on each side until golden and crispy.
  6. Slice in half and serve warm.
