A hearty and comforting soup featuring Italian sausage, cheese tortellini, and fresh spinach in a rich tomato broth.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (9 oz) package cheese tortellini
  • 4 cups fresh spinach
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

1. Prepare the Crust:

  1. Brown sausage in a large pot over medium heat, breaking it up as it cooks.
  2. Add onion and garlic, cooking until softened, about 5 minutes.
  3. Pour in chicken broth and diced tomatoes, bring to a boil.
  4. Add tortellini and simmer for 7-9 minutes until tender.
  5. Stir in spinach and seasonings, cook until spinach wilts.
  6. Season with salt and pepper to taste and serve with Parmesan cheese.

Notes

You can customize the seasonings to taste.
