For the Crust:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 (9 oz) package cheese tortellini
- 4 cups fresh spinach
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
1. Prepare the Crust:
- In a large pot, brown sausage over medium heat, breaking it into crumbles. Drain excess fat.
- Add onion and garlic to the pot and sautΓ© until softened, about 5 minutes.
- Pour in chicken broth and diced tomatoes with their juices. Add basil and oregano. Bring to a boil.
- Reduce heat to a simmer and add tortellini. Cook according to package directions, usually 7-9 minutes.
- Stir in spinach and cook until wilted, about 2 minutes. Season with salt and pepper.
- Serve hot, garnished with Parmesan cheese.
