A hearty and comforting soup featuring Italian sausage, cheese tortellini, and fresh spinach in a rich tomato broth.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (9 oz) package cheese tortellini
  • 4 cups fresh spinach
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

1. Prepare the Crust:

  1. In a large pot, brown sausage over medium heat, breaking it into crumbles. Drain excess fat.
  2. Add onion and garlic to the pot and sautΓ© until softened, about 5 minutes.
  3. Pour in chicken broth and diced tomatoes with their juices. Add basil and oregano. Bring to a boil.
  4. Reduce heat to a simmer and add tortellini. Cook according to package directions, usually 7-9 minutes.
  5. Stir in spinach and cook until wilted, about 2 minutes. Season with salt and pepper.
  6. Serve hot, garnished with Parmesan cheese.

Notes

You can customize the seasonings to taste.
