For the Crust:

  • 4 large tortillas
  • 6 eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup cooked bacon or sausage (optional)
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C). Grease a pie dish or quiche pan.
  2. Layer the tortillas in the dish, overlapping slightly to cover the bottom and sides.
  3. In a bowl, whisk together eggs, milk, salt, black pepper, and garlic powder.
  4. Sprinkle half of the cheese over the tortillas, followed by the diced bell peppers, onions, and cooked meat (if using).
  5. Pour the egg mixture over the filling, then top with the remaining cheese.
  6. Bake for 25-30 minutes or until the eggs are set and the top is golden brown.
