For the Crust:
- 4 large tortillas
- 6 eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup cooked bacon or sausage (optional)
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Grease a pie dish or quiche pan.
- Layer the tortillas in the dish, overlapping slightly to cover the bottom and sides.
- In a bowl, whisk together eggs, milk, salt, black pepper, and garlic powder.
- Sprinkle half of the cheese over the tortillas, followed by the diced bell peppers, onions, and cooked meat (if using).
- Pour the egg mixture over the filling, then top with the remaining cheese.
- Bake for 25-30 minutes or until the eggs are set and the top is golden brown.
