For the Crust:
- 3β4 lb beef chuck roast
- 1 cup beef broth
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 tbsp soy sauce
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1 tbsp cornstarch (optional, for thickening)
Instructions
1. Prepare the Crust:
- Place beef roast in slow cooker.
- In a bowl, whisk together beef broth, balsamic vinegar, honey, soy sauce, garlic, thyme, rosemary, and pepper. Pour over roast.
- Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender.
- Remove beef from slow cooker and let rest. If desired, whisk cornstarch into cooking liquid and simmer until thickened to create a glaze.
- Slice beef and serve with glaze drizzled on top.
