Tender roast beef with a sweet and tangy balsamic glaze, cooked to perfection in your slow cooker.

For the Crust:

  • 3–4 lb beef chuck roast
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

1. Prepare the Crust:

  1. Place beef roast in slow cooker.
  2. In a bowl, whisk together beef broth, balsamic vinegar, honey, soy sauce, garlic, thyme, rosemary, and pepper. Pour over roast.
  3. Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender.
  4. Remove beef from slow cooker and let rest. If desired, whisk cornstarch into cooking liquid and simmer until thickened to create a glaze.
  5. Slice beef and serve with glaze drizzled on top.
