- 1 pound German sausages (such as bratwurst), sliced
- 4 cups potatoes, peeled and cubed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream

- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried thyme

Instructions
- Preparation:
- Prepare the ingredients by slicing the sausages, peeling and cubing the potatoes, dicing the onion, and mincing the garlic.
- Cooking the Soup:
- Brown Sausages: In a skillet, brown the sliced sausages over medium heat until cooked through. Set aside.
- Start Soup Base: In the slow cooker, combine potatoes, onion, garlic, and chicken broth.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
- Make Roux: In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes, stirring constantly.
- Add Cream: Slowly whisk in the heavy cream to the roux until smooth. Let thicken for a couple of minutes.
- Finish Soup: Stir cream mixture into the slow cooker. Add browned sausages, salt, pepper, parsley, and thyme. Stir well.
- Heat Through: Cover and cook on low an additional 15-20 minutes.
- Serving:
- Serve hot, garnished with chopped fresh parsley and a dollop of sour cream if desired.
