For the Crust:
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 (14 oz) can diced tomatoes
- 1 (9 oz) package cheese tortellini
- 2 cups fresh spinach
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened (about 3 minutes).
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Add tortellini and cook according to package instructions (usually 5-7 minutes).
- Stir in spinach, basil, salt, and pepper. Cook until spinach wilts (about 2 minutes).
- Serve hot, garnished with Parmesan cheese.
