For the Crust:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 (14 oz) can diced tomatoes
  • 1 (9 oz) package cheese tortellini
  • 2 cups fresh spinach
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened (about 3 minutes).
  2. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  3. Add tortellini and cook according to package instructions (usually 5-7 minutes).
  4. Stir in spinach, basil, salt, and pepper. Cook until spinach wilts (about 2 minutes).
  5. Serve hot, garnished with Parmesan cheese.

Notes

You can customize the seasonings to taste.
