Sweet Potato Turkey Chili

For the Crust:

  • 1 lb lean ground turkey
  • 1 large sweet potato, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add turkey and cook until browned, breaking it up with a spoon.
  2. Add onion, garlic, and bell pepper. Cook for 5 minutes until vegetables soften.
  3. Stir in sweet potato, black beans, diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  5. Adjust seasoning if needed and serve hot.

Notes

You can customize the seasonings to taste.
