For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced (for garnish)
Instructions
1. Prepare the Crust:
- Place chicken breasts in the crockpot and top with pineapple chunks.
- In a small bowl, whisk together soy sauce, brown sugar, garlic, ginger, and red pepper flakes. Pour over the chicken.
- Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is tender.
- Remove chicken and pineapple from the crockpot. In a small bowl, mix cornstarch and water, then stir into the sauce in the crockpot.
- Return chicken and pineapple to the crockpot, cover, and cook for an additional 15-20 minutes until sauce thickens.
- Garnish with sliced green onions before serving.
