For the Crust:
- 4 boneless, skinless chicken breasts
- 3 large shallots, thinly sliced
- 2 lemons, juiced and zested
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
- 1 tbsp honey
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add shallots and sauté for 3-4 minutes until softened. Add garlic and cook for 1 minute until fragrant.
- Stir in lemon juice, zest, thyme, salt, pepper, chicken broth, and honey. Bring to a simmer.
- Return chicken to the skillet, spooning the sauce over the top. Cover and cook for 8-10 minutes until chicken is cooked through.
- Serve hot, garnished with extra lemon slices if desired.
