For the Crust:

  • 4 boneless, skinless chicken breasts
  • 3 large shallots, thinly sliced
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1 tbsp honey

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown. Remove and set aside.
  2. In the same skillet, add shallots and sauté for 3-4 minutes until softened. Add garlic and cook for 1 minute until fragrant.
  3. Stir in lemon juice, zest, thyme, salt, pepper, chicken broth, and honey. Bring to a simmer.
  4. Return chicken to the skillet, spooning the sauce over the top. Cover and cook for 8-10 minutes until chicken is cooked through.
  5. Serve hot, garnished with extra lemon slices if desired.
