- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced
- 2 carrots, sliced
- 1 celery stalk, sliced
- 6 cups turkey or chicken broth
- 2 cups cooked turkey, shredded
- 1 cup cooked white rice
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Preparation:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for another 1 minute.
- Cooking the Soup:
- Add diced sweet potato, carrots, and celery to the pot. Stir to combine.
- Pour in the turkey or chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes, or until vegetables are tender.
- Adding Turkey and Rice:
- Stir in shredded turkey and cooked rice.
- Add dried thyme, salt, and pepper. Simmer for an additional 5 minutes.
- Serving:
- Ladle soup into bowls and garnish with chopped fresh parsley if desired.
- Serve warm.
