  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • 6 cups turkey or chicken broth
  • 2 cups cooked turkey, shredded
  • 1 cup cooked white rice
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preparation:
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onion and cook until translucent, about 3-4 minutes.
  4. Add minced garlic and cook for another 1 minute.
  5. Cooking the Soup:
  6. Add diced sweet potato, carrots, and celery to the pot. Stir to combine.
  7. Pour in the turkey or chicken broth and bring to a boil.
  8. Reduce heat, cover, and simmer for 20 minutes, or until vegetables are tender.
  9. Adding Turkey and Rice:
  10. Stir in shredded turkey and cooked rice.
  11. Add dried thyme, salt, and pepper. Simmer for an additional 5 minutes.
  12. Serving:
  13. Ladle soup into bowls and garnish with chopped fresh parsley if desired.
  14. Serve warm.
